Meal in a Muffin

Grace loves all kinds of baked items from breads to cookies and muffins. She is definitely a carb-lover. So over the last few years I have developed the ultimate "Meal in a Muffin" for her. She and I both love these muffins which have all of the healthy foods I would like for her to eat, and we usually make 4 dozen at a time and freeze some of them away. But the supply does not last all that long, and before I know it we are baking again.
